Start the new year off right with this delicious strawberry smoothie bowl.
I really like smoothie bowls in the spring and summer but after the excess of Christmas I was craving something fresh and now I think I might have to go for a smoothie bowl all year round! If you’re doing Veganuary, they’re a great low maintenance breakfast.
Strawberry Smoothie Bowl
A quick and easy fruity breakfast.
- 250 g frozen strawberries
- 1 frozen banana
- 1 banana
- 50 ml coconut milk
- 1 tsp agave nectar optional
- fresh fruit to decorate
Add your frozen strawberries, both bananas and half the coconut milk to a blender and pulse until thick and smooth. Add more coconut milk until you reach your desired thickness. Add agave if using, I find berries out of season can be a bit sharp.
Top with fresh fruit and enjoy. If you find the mixture is 'too cold' then cut the frozen strawberries back to 175g and make up the rest with fresh.
I freeze my strawberries in batches and always pre-slice them and the bananas as it makes them easier to blend. For a creamier texture, you could add some coconut yoghurt to keep it vegan or some natural yoghurt otherwise.
You can choose whichever toppings you like, I went for strawberries, raspberries and freeze dried strawberries this time.
For this bowl, I added some extra frozen strawberries after the mixture was smooth and then blitzed quickly to keep some pieces of frozen strawberry but this is my own preference. It gives it more of an ice-cream texture.
