This year I decided to take inspiration from Pinterest and Frances Quinn for my Christmas cake.
Fondant really isn’t my strong point and if I’m honest, I really don’t enjoy decorating Christmas cakes. I find working with fruit cake, marzipan and fondant icing really quite stressful as I can never get the finish I want but I’m actually really happy with how the cake turned out this year. It isn’t perfect, but I’m really pleased with it.
I’d seen Frances Quinn of GBBO fame create a Christmas cake design using cut-outs a few years ago but I’d never been happy enough with the colour and texture of the cake to do it myself before now. But, using my favourite Christmas cake recipe I was delighted with the colour and texture this year.
I initially decided to just cutout the gingerbread man shapes but once I started I couldn’t stop, I added some small snowflake shapes and filled them with sprinkles to add some colour to the cake.
As I say, it’s far from perfect but I’m really happy with it. It’s quite different to anything I’d usually make.
